This is another great prepare a head and bake morning of or bake the night before and just reheat in the morning! This is a childhood recipe from Mr. LBC that his mom makes a lot for special occasions! It is super easy and you can add additional items if you’d like! If you are feeding a crowd I would for sure double this recipe and use a 13×9 pan!
Oven Omelette
8 stripes of Bacon, cooked and diced! If you have an air fryer, it is amazing for quick no mess bacon! We however like to use sausage, I would say 1/2 pound for this size of recipe.
4 green onions, chopped
8 large eggs
1 cup milk of choice
Salt and Pepper
2 1/2 cups Monterey Jack Cheese, you could of course use any cheese you prefer
You could totally make this with a ton of veggies, or ham or turkey bacon , trade out cheese for cheddar or pepper jack!
Sauté onions or veggies if you are using any. Beat eggs and milk together and add in bacon or other meat, veggies, if you are using, and 2 cups of cheese, (reserve a little for the topping).
Pour into a 2 quart baking dish (9 by 9 pan works great) Bake uncovered for 35 – 40 minutes. Sprinkle with remaining cheese and and bake until melted (Maybe 15 minutes)
You can easily bake this the night before and in the morning sprinkle with remaining 1/2 cup cheese and reheat! Or, have it all mixed and ready to go into the oven in the morning!
Serve with the Overnight Cinnamon Rolls and some fresh fruit and breakfast is done!
